With the holidays coming up, I thought I would share one of my family's favorites. We call it Maggie's Jello, named after one of my nieces. When she was a toddler, my Mom had made this for Easter. Maggie refused to eat much that year, but after everyone had left the table, she climbed up, sat right in the middle and ate this to her heart's content. Now, we make this every holiday not only because it is a family favorite, but also to remember my Mom.
Maggie’s Jello
1 C boiling water
1 – 3 oz lime jello
1 – 8 oz cream cheese
¼ C sugar
3 T orange juice
3 T lime Juice
1 C heavy cream, whipped OR 1 - 12 oz Cool Whip
Add water to jello. Dissolve. In a bowl, blend cream cheese and sugar. Add jello and juices. Chill until slightly thickened. Fold in whipped cream. Chill until set.
