Recipe Swap Thursday

Potato Coquettes

4-6 C cold mashed potatoes
3 eggs, slightly beaten
1 C dry bread crumbs
¾ C Romano or Asiago cheese
½ C finely chopped onions
¼ C chopped parsley


Mix all ingredients together. If too soft, add more breadcrumbs. Shape into oblong fingers or round patties. Dip into more beaten egg, and then into more breadcrumbs. Fry in oil. Drain on paper towels.

Mmmm! My mother used to make something similar, except it was just the potatoes mixed with some flour to make it easier to shape into cakes. I bet it would be delicious with cheese, onions, and parsley. I finally got a recipe posted today! :)
